Andouille Noted

We love to see what’s cooking! Lately, a lot of happy home cooks have written reviews of our Andouille Sausage, and we wanted to share some with you.

What’s so great about this sausage? Well, our spicy Cajun-style Andouille Sausage is made with heritage-breed pork, all-natural ingredients, and is smoked over real hardwood. It’s an authentic and tasty option when you want to add some heat to your recipes.

A foodie called “T-N-T” from CO loves using andouille in gumbo. We’ll come over anytime for a bowl of that spicy goodness!

I’ll always use D’Artagnan andouille sausage for my gumbo. Since we moved to Denver from Florida I simply cannot find authentic Cajun style andouille sausage. We were going to a family reunion in Idaho and I was making gumbo for the whole clan. I ordered six pounds to be delivered. When it didn’t arrive when expected, I called the customer service line and they completely took care of everything, and the sausage was delivered the day before I was going to use it. Again, totally satisfied with the product and customer service!

I could not be happier with this sausage. I live in California where andouille sausage is unavailable except for store brands which are inauthentic. I am entering a jambalaya contest based on taste, presentation, and creativity. I need an andouille sausage that is perfect, like this one. It should have smoke, be natural, and flavorful. It should also have the right amount of heat.

I have ordered andouille from a very well known purveyor in New Orleans before and it has too much heat and almost ruined a gumbo in which I used it. D’Artagnan sausage has heat that is not present at first taste, but gently lingers in the mouth as an aftertaste. And the thin, natural casing can be used in my jambalaya without adding a chewy texture which lesser sausages have; or I can remove it and the sausage will still hold its structure. Add that to the hormone free, vegetarian-fed pork used and I can’t imagine ever again ordering any other andouille sausage.

Our jambalaya recipe includes Andouille Sausage and Tasso Ham for a spicy kick.
