Happy summer! Since today is the first day of summer, we are looking ahead to all the glorious eating in store this season.
Whether it’s a weekend cookout or a weeknight supper, we tend to eat lighter and fresher in the summer. Here are a few recipes to get you in the mood for leisurely meals with a cold bottle of white wine, or a tall IPA.
Thai-Style Steak Salad
Cobb Salad Turkey Burger
If a burger has “salad” in the name, that makes it extra summery. This knife-and-fork turkey burger has all the flavors of our favorite Cobb salad with smoky bacon, avocado, blue cheese, and tangy mayonnaise on toasted country bread.
Baked Beans with Bacon & Molasses
Baked beans are a summer cookout must-have, and making them yourself is well worth the time. This easy recipe yields tender beans with a sweet, smoky sauce. Bacon weave optional (but recommended). Perfect for a pot-luck gathering.
Pasta Salad with Roasted Cauliflower, Olives & Saucisson Sec
A cold pasta dish like this one is perfect for a light dinner, or a party. The salty bite of saucisson sec works well with the pasta, roasted cauliflower, fresh herbs and oil-cured olives.
Basque Brochettes
These flavorful skewers highlight quintessential Basque flavors – shrimp, piment d’espelette and jambon de bayonne. Best of all, they’re party perfect in just 15 minutes. For an even faster version, throw these babies on the grill.
