This comforting recipe for Wild Mushrooms with Truffled Soft Polenta & Parmesan comes together quickly and makes a satisfying side dish, or a simple meal. Make it for brunch and add a poached egg with a runny yolk.

We used the mushroom mix described above, but any combination of wild and cultivated mushrooms will work. Try your favorites, or use what’s in season. Just don’t skip the miso paste – it adds depth and a boost of umami.

    This recipe looks delicious! It’d be a shame to leave it out, but I wonder how it would taste without the black truffle butter?
