I cut the racks (I had 4 of them) in half and did a 3-hour brine in 2 separate containers. Did a reverse sear (start in the oven at 265 until meat temp is 125) with a finish on a mesquite wood-fired grill. 2 minutes fat side down – 4 minutes bone side down. Perfect medium rare and the lamb flavor and texture was amazing.
