What is the keto diet, and why is it suddenly everywhere? Keto is short for ketogenic and refers to a metabolic state called ketosis, a natural process of the human body designed to help us survive when food intake is low. In essence, keto is a low-carb, high-fat diet plan designed to help your body burn stored and ingested fat for energy. While we are not necessarily advocates for this diet, we are delighted that it focuses on eating fat. This means you can still enjoy butter, bacon, duck fat, foie gras, and many of the tastier things in life.

Have a look at our 7 keto-friendly recipes, enjoyable for anyone, but especially useful for those embarking on this diet. Please ignore any bread in the photos. It is not part of a keto regimen.

1. Filet Mignon with Blender Béarnaise Sauce

Silky béarnaise pairs perfectly with filet mignon and our fool-proof blender method makes the sauce quick and easy. Learn how to whip us this creamy béarnaise sauce,  because it will be a keto standard you can enjoy with many different dishes, like asparagus or broccoli.

2. Foie Gras Butter

This recipe is adapted from Jennifer McLagan’s excellent cookbook, Fat: An Appreciation of a Misunderstood Ingredient, with Recipes. We highly recommend the cookbook and this keto-friendly condiment. Use a dollop on a seared steak, chop, or spread on endive. Sorry, no bread!


3. Bacon-Wrapped Asparagus

Non-starchy vegetables are a big part of the keto diet, and asparagus is a favorite. But asparagus wrapped in smoky bacon is even better and makes a quick and easy side dish. Choose asparagus that’s thicker than a pencil for best results.


4. Easy Duck Rillettes

Rillettes made the old-fashion way, using only duck, wine, water, aromatic vegetables, and herbs, once again affirm that the best things in life are very often the simplest. Serve these with cornichons. Stuff into lettuce wraps, into avocados, or eat a dollop on a spoon.


5. Peruvian-Style Roast Chicken with Aji Verde Sauce

This roast chicken is made extra tasty from a smoky, citrusy wet rub, but the real star of the dish is the super-addictive condiment, aji verde, more affectionately known as “that famous green sauce.” There are several variations of this mysterious sauce – ours uses traditional Aji Amarillo paste and mayo, but with the addition of a ripe avocado for a smooth richness that tempers the spice. So good. So keto.

6. Grilled Buffalo Ribeye Steak with Smoky Onions & Roquefort

Full-flavored buffalo ribeye needs little embellishment. But it does need more fat to be truly keto. Here, we topped it with caramelized onions and creamy bleu cheese for a sweet and salty kick.


7. Duck Fat Kale Chips

What can you enjoy for a snack on the keto diet? Try our totally addictive duck fat baked kale chips. Better than potato or corn chips, and keto compliant, these are quick and easy to make, and fun to eat.
