5 Lamb Cuts You Will Want to Try

Just in time for Easter, there are five new cuts of tender and mild lamb at dartagnan.com. Whether you are carving a whole roasted leg of lamb or serving individual lamb porterhouse chops, our lamb is perfect for any occasion.

Our domestic lambs are raised on high-altitude pasture in the Rocky Mountains for between six to nine months. They never receive antibiotics or hormones and are allowed to engage in all their natural behaviors in a stress-free environment.

They are finished with a minimal supplemental grain feed which contains no animal by-products. This results in tender texture and mild lamb flavor.

Read on to see the new additions, and start planning your next lamb dinner.

Bone-In Leg of Lamb

Domestic Boneless Leg of Lamb.jpg

This sizable bone-in leg of lamb is larger than our Australian cut, weighing in at 8 to 10 lbs. It’s perfect for Easter dinner or any family gathering. Leg of lamb is easy to prepare; just rub with herbs and garlic and roast it in the oven while you prepare the rest of your feast. Our leg of lamb recipe shows you how and offers a tasty truffle sauce.

Lamb Spare Ribs AKA Denver Ribs

Denver Ribs Lamb

Sleek Denver ribs are a cut that includes seven or so ribs from the breast. They are smaller than pork ribs and packed with great lamb flavor. For those that love lamb, these ribs will be a welcome addition.

Lamb ribs are best when braised, slow-cooked, or briefly poached and then finished on the grill. Think of them as an alternative to baby back pork ribs.  We can hardly wait for grilling season to begin!

Lamb Porterhouse Chops

Packed with flavor, these hefty and tender 8-ounce, bone-in, lamb porterhouse chops are perfect for the grill or pan-searing (finish them in the oven for a few minutes) and make an impressive single serving. They can easily take the place of steak at the center of any meal.

Ground Lamb

We follow the 80/20 rule with ground lamb; 80% lean meat – from premium cuts, not trim – balanced with 20% fat. Think of all the things you can make: lamb burgers, lamb meatballs, lamb chili, lamb meatloaf, lamb kofta kebabs, lamb on pita pizza. It’s lambtastic … that is, assuming you’re a fan of lamb.

Sure, 10 lbs seems like a lot of lamb, but if you divide it into 1-2 lb freezer bags, you can enjoy it for many meals in the future.

Lamb Sirloin Steak

From our Australian 100% grass-fed lamb, these sirloin steaks are individually portioned for easy serving. They are great when marinated and pan-seared for a short time. Try lamb sirloin steak sliced and served over polenta, rice, or a salad.
